Pentridge Cellars
Bendigo, VIC: Famous for its deep red shiraz and c Bendigo, VIC: Famous for its deep red shiraz and cabernet sauvignon, the Bendigo wine region encompasses wineries in and around the picturesque town of Bendigo. Situated completely inland, the region has a Mediterranean climate with warm, dry summers and mild, wet winters. Like many others, it saw a wine boom when it struck gold, as Jacques Bladier and others planted vineyards at Epsom in 1855. Phylloxera devastated Bendigo by the end of the 19th century, but since Stuart Anderson pioneered its rebirth in the late 1960s with the Balgownie Vineyard, it has been a flourishing wine region. At its peak in 2005, the region produced 1.4 billion litres of wine and still produces more than a billion litres of wine a year - with a significant portion of coming from family-run wineries.

In The Vines: Malolactic fermentation. There are m In The Vines: Malolactic fermentation. There are many bio-chemical processes wine undergoes in its journey from grape to glass, and aside from the tried-and-true fermentation step that gives wine its alcohol content, there is another 'fermentation' that occurs in many wines: malolactic fermentation. Deriving its name from the two primary acids involved in the process, malolactic fermentation, a.k.a. malo or MLF, isn't a 'true' fermentation as there is no yeast involved. Instead, malic acid is converted by lactic bacteria (often Oenococcus Oeni) into lactic acid. Malic acid is tart and acidic, while lactic acid is creamier - it is found in milk, after all! - so this process generally 'softens' the wine, lowering its acidity and imbuing it with a creamy, velvety texture. Nearly all red wines undergo malolactic fermentation as well as whites like Chardonnnay and Viognier, and to prevent the process in other types of wine, winemakers utilise techniques such as chilling, filtering, and/or adding of fining agents or enzymes to the wines.

Wine Region: Orange. Coming up alongside the many Wine Region: Orange. Coming up alongside the many young (or young-again) Australian wine regions that have found worldwide success in recent years, Orange's first modern commercial vineyard plantings were in 1980, when keen-eyed viticulturalists saw something special in the varied terroir of the high-altitude, cool-climate region. But Orange was relatively unknown until 1988, when high-profile vintner Philip Shaw started his Koomooloo winery, bringing name recognition to the once anonymous wine region. Through the 1990s, plantings expanded rapidly, and today there are more than 1,500 hectares of land under vine, comprising mostly of Shiraz, Chardonnay and Cabernet Sauvignon.

Part of Tasmania's picturesque Southern Wine Trail Part of Tasmania's picturesque Southern Wine Trail and only 15 minutes from Hobart, the Coal River Valley is one of Tasmania's preeminent wine producing regions. Following the path of the Coal River, the region is a lush, fertile area of rivers and farmland - with plenty of the its sunny north-west facing slopes dedicated to vines of Chardonnay, Pinot Noir and Riesling. Named after its abundant coal deposits, the Coal River Valley was one of the earliest areas used by the first British settlers outside of Hobart, and since commercial wine production began in the 1970s, a handful of small-scale wineries have been taking advantage of the cool, dry maritime climate to make some of Tasmania's best wines.

In The Vines: Finish. It might seem like the term In The Vines: Finish. It might seem like the term 'finish' simply refers to a wine's aftertaste, but in fact there are many other things to look out for after putting the glass down. There's the flavour of the finish, yes - fruity, spicy, tart, etc. - but also how long those flavours linger in the mouth, and how they swell or flow into each other. The texture of the finish is also important - features like tannic content and crispness alter how the wine feels after you've taken a sip. A finish that's long is often seen as a marker of quality, but what's more important is that the finish is both long AND pleasant. A wine with a long but unpleasant finish is unlikely to leave you wanting more.

2019 Main Ridge Estate Half-Acre Pinot Noir: In 19 2019 Main Ridge Estate Half-Acre Pinot Noir: In 1975, Nat and Rosalie White purchased a tiny half-acre lemon orchard in Red Hill with a vision: to create a Burgundian style vineyard and winery in a location where the climate and suitability of wine varieties was uncertain. Over the next 44 years, the pair developed the Main Ridge Estate into one of the most iconic and sought-after names in the Mornington Peninsula. Nat White became somewhat of a Peninsula legend and mentor to many, and after 44 years of winemaking, the Whites sold the winery in 2017 to the Sexton Family, who very much celebrate the history and tradition of the estate. The cream of their crop is still their highly prized and rare Half Acre Pinot Noir, showcasing the best of what Burgundian winemaking techniques applied to the Mornington's cool-climate can offer.

Like many Victorian wine regions, the Mornington P Like many Victorian wine regions, the Mornington Peninsula underwent a whole lifecycle of production - consisting of early plantings in the 19th century, a gold rush boom and a 50-year 'death' - before its revival in the 70s and 80s and its development into the premium wine region it is today. Just over an hour from Melbourne and sandwiched between three bodies of water, the Mornington Peninsula has coastal views, green pastures and award-winning cellar doors and restaurants dotted throughout its rolling hills. With its cool climate and maritime influence, the region is a Pinot Noir paradise - it has over 9% of Australia’s total Pinot Noir plantings (the third largest Pinot Noir wine region) and in 2019 the average price paid for Mornington Peninsula Pinot Noir was the highest in Australia, with its Chardonnay and Pinot Gris occupying similar positions. Despite this (or perhaps because of it), the Mornington was Australia’s #1 wine tourism destination in 2019, owing in no small part to the Mornington Peninsula International Pinot Noir Celebration: held biennially since 2003, the event showcases to local and international audiences the region's finesse at producing some of Australia's finest Pinot Noir.

2018 Wendouree Shiraz: With release years spanning 2018 Wendouree Shiraz: With release years spanning three centuries, Wendouree wines occupy a special place in Australian wine history. The original late 19th-Century cellar in the Clare Valley still forms the backbone of its wine production today, and the vines that produce the grapes for this stellar Shiraz are over 100 years old.

​The first Wendouree wines were a decidedly artisan affair, with founder Alfred Percy Birks bottling by hose and tap at the cellar for visitors and traveling to country hotels by horse and cart laden with casks. More plantings were added in the 20th century as his son Roly took over the estate, and current custodians Lita and Tony Brady continue to uphold the impeccable quality of the wines produced. The only way to acquire Wendouree wines is by tightly-held annual mailing list, or from select trusted retailers, and as such they are highly coveted by collectors.

"Wow. Very complex, rich, red to dark fruit and plenty of very fine, exotic, sweet-scented spice, as well as a red floral edge and a thread of dried herbs and fresh earth. The palate has a powerful, layered, long and symphonic feel and is packed with rich red-plum and black-cherry flavor. Such attractive freshness and majestically long, smoothly wrapped tannins. The finish is so long, seamless, profoundly pure and perfectly balanced. Freshens into a lasting, plum-stone finish. This is incredible, the best Wendouree shiraz of the modern era. Heathcote, VIC: Presided over by the Mt. Camel ran Heathcote, VIC: Presided over by the Mt. Camel range in the north, Victoria's Heathcote wine region, like many others, has its roots in the gold rush of the 1800s. Heritage architecture in Heathcote's streets show evidence of this period, but early settlers didn't only have gold in their sights. The slopes of the Mt Camel Range comprise a superb red soil with fine structure overlying uniformly textured red calcareous sodic clay soils - prime vine real-estate. Unfortunately, phylloxera brought destruction to the region's vines, and it wasn't until the 1960s when vignerons like Albino Zuber and Bruno Pangrazio planted the vines which today contribute to some of the iconic wines that the Heathcote wine region is renowned for - both at home, and internationally. Shiraz is Heathcote's biggest planting, and Heathcote wines are defined by an inky depth of colour and deep, dark, complex fruit, as well as great cellaring ability.
