In recent years there has been a surge in the popularity of organic wines and environmentally conscious farming practices, but biodynamic production takes it one step further. Biodynamic winemaking is as much a philosophy as it is a process, placing a key focus in leaving the vineyard area's whole ecology intact. Based on the ideas of scientist and philosopher Rudolf Steiner, biodynamic winemaking treats the whole vineyard as one big organism, with an emphasis on sustainability and soil health. Composting is a pillar of biodynamics, and maybe its most (in)famous: it is a biodynamic staple - and necessary for biodynamic certification - to bury cow horns filled with cow manure compost over the winter, only to then dig them up again and spread their contents over the vineyard. This extended underground stay causes the soil's microorganisms to 'soak' into the manure and proliferate, enriching the vineyard soil when they are spread with the manure. And it works - studies show that biodynamic soils tend to be more diverse in microflora and fauna. Biodynamics also precludes the use of artificial or synthetic pesticides and additives, meaning that biodynamic wines focus on a direct connection between where the grapes are grown and what comes out of the bottle.

Cullen Diana Madeline 2018: Diana and Kevin Cullen Cullen Diana Madeline 2018: Diana and Kevin Cullen planted their first commercial vineyard at Wilyabrup in 1971, making them one of the first producers in the now iconic Margaret River region. On the cusp of its 50th anniversary, the exclusively certified-biodynamic and carbon positive winery is still releasing outstanding bottlings that showcase the very best of the region's grapes and ground. Vanya - youngest daughter of Diana and Kevin and Winemaker of the Year at the 2020 Halliday Wine Companion Awards - is now at the winemaking helm, producing wines that are better than ever. The Diana Madeline, named after her late mother, is an authentic expression of Margaret River Cabernet, enhanced by the addition of 10% Merlot, 6% Cabernet Franc and 5% Malbec, and produced biodynamically with little external influence. The result is a Langton's-Classified Exceptional wine that will grow into an even more outstanding drop with time in your Pentridge Cellar.

The Geelong wine region boasts historical roots ba The Geelong wine region boasts historical roots back to the early 1800’s, when Geelong was a booming regional centre and hub of the vast Western District trade. The planting of vines around this time by Swiss settlers saw Geelong and its surrounding areas emerge as the largest grape growing region in Victoria and Australia. However, vine disease and economic shifts in the 19th century rendered it mostly dormant until the late 1960s, when Daryl & Nini Sefton came to the region to revive its winemaking spirit. Fast forward to the current day, where all 60 wineries in the region are family owned and operated, all highly passionate and tenacious amidst the region's tougher conditions.

Geelong forms one third of the trifecta of wine regions dubbed the Pinot Coast along Victoria's south, and it itself has three distinct sub-regions. From the maritime microclimate of The Bellarine and Surf Coast to the dark volcanic topsoils and dry, sandy outcrops of the Moorabool Valley, sub regional nuances add an intriguing, multi-faceted complexity to Geelong wines, whose climatic conditions on the whole are reminiscent of France's cool-climate Bordeaux and Burgundy. Naturally, the region is most well known for its Pinot Noir, Chardonnay, and Shiraz, though other varieties like Pinot Grigio and Nebbiolo are produced.

2018 Giaconda Estate Vineyard Chardonnay: Giaconda 2018 Giaconda Estate Vineyard Chardonnay: Giaconda Estate, under the direction of experienced winemaker Rick Kinzbrunner, produces one of the finest Chardonnays in Australia. Situated at the foothills of the beautiful North-East Victorian Alps near Beechworth, Giaconda wines are hand-picked and hand-crafted according to an almost natural wine making process, where indigenous yeasts are employed for fermentation, natural bacteria for Malolactic fermentation, French oak barrels for ageing, minimal sulphur additions, and no filtration before bottling. With only 4 hectares of vines and 2,500 cases of production across all of their releases, Giaconda Estate is an artisanal producer of artisan wines. Like the gold that brought wealth to the region so long ago, Giaconda's flagship Chardonnay has a refined opulence that deserves no less than a top-shelf spot in your Pentridge Cellar. 

"A whole heap of struck match, dropped into melting butter. It’s slippery and powerful, lime and fresh cut pineapple acidity, oatmeal, ginger and cinnamon, peppermint and white chocolate, pear skin and chalk, feels very wet and very dry at once, citrus zest and oak spice, pancakes with peaches, grip and crunch and smoke on a very long finish. Almost painful in its intensity and volume, so much so, the neighbours can probably hear me drinking it. Yet, still, undeniable quality in the glass here. En garde. Drink 2021-2030."

In The Vines: Ever checked the label on the bottle In The Vines: Ever checked the label on the bottle while drinking a glass of bubbly and come across the words 'sur lie' or 'bâtonnage'? These terms are concerned with a component of the fermentation process called the 'lees' - remnants of yeast cells that have self-destructed through fermentation (dying for a greater cause). Wines aged sur lie - "on the lees" - tend to have more texture, creaminess, body and depth than identical wines aged without, with notes of toast, hay, almond, buttermilk and caramel being common flavours associated with lees. The sur lie aging process can take as little as a few months all the way to a few years, and some producers will stir the wine every so often (a process termed 'bâtonnage') to increase the extraction of these characteristics.
Beechworth, VIC: The mineral rich hills around Bee Beechworth, VIC: The mineral rich hills around Beechworth are home to more than two dozen vineyards that are tended by winegrowing families with a fierce independence and a passion for making the very best artisan wines. The region struck gold - literally - in 1852, and a burgeoning new wine-growing industry quickly developed around the town. However, as the gold dried up so too did the flow of wine, and it wasn't until the 1980s with the establishment of Giaconda, Sorrenberg and Pennyweight wineries  that the modern practise re-emerged. These wineries came to define the boutique, hands-on approach to winemaking that the region's wines are known for. Not mass-produced or mass-marketed, the wines of Beechworth - primarily chardonnay, pinot noir and shiraz - are unique and highly artisanal, bringing out all the qualities and flavours that originate in its many unique microclimates.

World Class Cellars: Rising tall from the floor of World Class Cellars: Rising tall from the floor of Radisson Blu Hotel’s aptly named Wine Tower Bar is this ingenious wine storage solution. The first of its kind in Europe and over 14 meters in height, the vertical cellar boasts a 2800-bottle storage capacity, with its uppermost bottles accessed by ‘flying wine waitresses’ who scale the tower in harnesses to bring you the finest wines on offer. Western Australia’s isolated Margaret River region provides no shortage of phenomenal wines, and Clairault is certainly not the exception. A portion of wine is allowed to undergo malolactic fermentation while the rest is sulphured, causing the resulting wine to have both a bold complexity and youthful purity that will age beautifully in your Pentridge Cellar.
